Ingredients: 1 medium spaghetti squash. 1 cup cooked quinoa. 1 cup marinara sauce. 1/2 cup shredded mozzarella cheese. 1/4 cup grated Parmesan cheese. 1/4 cup sliced black olives. 1/4 cup sliced pepperoni. 1/4 cup sliced bell peppers. 1/4 cup sliced onions. 1/4 teaspoon dried oregano. 1/4 teaspoon garlic powder. Salt and pepper to taste. Fresh basil leaves for garnish.
Instructions: Preheat your oven to 375F 190C. Cut the spaghetti squash in half lengthwise and scoop out the seeds and membranes. Place the squash halves, cut side down, on a baking sheet lined with parchment paper. Bake for 30-40 minutes, or until the squash is tender and you can easily scrape it with a fork to create spaghetti-like strands. Remove from the oven and set aside. In a large bowl, combine the cooked quinoa, marinara sauce, mozzarella cheese, Parmesan cheese, black olives, pepperoni, bell peppers, onions, dried oregano, and garlic powder. Mix well to combine. Using a fork, scrape the cooked spaghetti squash into the bowl with the other ingredients. Mix everything together until well combined. Season with salt and pepper to taste. Transfer the mixture back into the spaghetti squash shells, dividing it evenly between the two halves. Return the filled spaghetti squash halves to the baking sheet and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.
