Ingredients: 4 chicken breasts. 1 cup rice. 2 cups chicken broth. 1/4 cup lime juice. 1/4 cup chopped cilantro. 2 cloves garlic, minced. 1 teaspoon cumin. Salt and pepper to taste.
Instructions: Brown the chicken breasts in a large skillet over medium-low heat for about 5 to 7 minutes on each side, or until they are fully cooked. Take the chicken out of the pan and set it aside. Put rice, chicken broth, lime juice, cilantro, garlic, cumin, salt, and pepper in the same pan. Bring the mixture to a boil, then turn down the heat, cover, and let it simmer for 20 minutes, or until the rice is done and the liquid is gone. Put the lid back on the pan with the chicken and cook for another 5 minutes to heat it through. If you want, you can serve it hot with extra cilantro and lime wedges on top.
