This spicy Jalapeno Spanish Chicken recipe will make your dinner more interesting. A spicy tomato and jalapeno sauce is used to cook tender chicken breasts, making a tasty and filling meal.
Ingredients: 4 chicken breasts. 2 jalapeno peppers, diced. 1 onion, chopped. 2 cloves garlic, minced. 1 can diced tomatoes. 1/2 cup chicken broth. 1 teaspoon cumin. 1 teaspoon paprika. Salt and pepper to taste. 2 tablespoons olive oil. Fresh cilantro for garnish.
Instructions: Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt, pepper, cumin, and paprika. Add chicken to the skillet and cook until browned on both sides, about 5 minutes per side. Remove from skillet and set aside. In the same skillet, add onion, garlic, and jalapeno peppers. Cook until softened, about 3 minutes. Stir in diced tomatoes and chicken broth. Bring to a simmer. Return chicken to the skillet and spoon some of the sauce over the top. Cover and cook for about 15-20 minutes, or until chicken is cooked through and tender. Garnish with fresh cilantro before serving.

Ingredients: 4 bone-in, skin-on chicken thighs. 2 cups baby potatoes, halved. 1 red bell pepper, sliced. 1 yellow bell pepper, sliced. 1 onion, chopped. 3 cloves garlic, minced. 2 teaspoons paprika. 1 teaspoon cumin. 1/2 teaspoon smoked paprika. 1/4 teaspoon cayenne pepper. Salt and pepper to taste. 2 tablespoons olive oil. 1 cup chicken broth. 1/4 cup fresh parsley, chopped.
Instructions: Season chicken thighs with paprika, cumin, smoked paprika, cayenne pepper, salt, and pepper. In a large oven-safe skillet, heat olive oil over medium-high heat. Add chicken thighs, skin-side down, and cook for 3-4 minutes until browned. Flip and cook for another 3-4 minutes. Remove chicken from the skillet and set aside. In the same skillet, add onions, garlic, and bell peppers. Saut for 2-3 minutes until they start to soften. Add baby potatoes and continue to cook for another 5 minutes, stirring occasionally. Pour chicken broth into the skillet and bring it to a simmer. Return the browned chicken thighs to the skillet. Cover the skillet and transfer it to a preheated oven at 375F 190C. Bake for 25-30 minutes or until the chicken is cooked through and potatoes are tender. Garnish with fresh parsley and serve hot.

It will take about 4 to 5 minutes on each side to brown the chicken breasts after you add them. Take it out of the pan and set it aside. Put chopped onion and minced garlic in the same pan. For about two to three minutes, until softened. After adding the sliced bell peppers, cook for another two to three minutes. Tomato dices and dried oregano should be added. Bring to a low boil. Put the chicken breasts back in the pan and cover them with sauce. Put the lid on and cook on low heat for 10 to 12 minutes, or until the chicken is fully cooked. Before serving, sprinkle with chopped fresh parsley.
