🥘HOMEMADE CHICKEN CURRY 🍛 I absolutely LOVE spicy food with a passion 🌶 I would probably eat it every day if I could! One of my favourite treats is a takeaway from the local Indian restaurant, and in the past I have been guilty of eating one too many takeouts...! However, now my boys are growing up and their appetites are like never ending bottomless pits, things have started to take a rather expensive turn... our last family Indian cost over £60!! So, in a bid to save money, I have become a little bit obsessed with making curry from scratch at home. I can’t pretend that it really rivals the excitement of a knock on the door after a long day, but it certainly is a fraction of the cost! And dare I say it is marginally more healthy, as at least I know what’s gone into it. To start, I fried chopped onions, garlic, and ginger in a splash of oil, and then added to chicken to cook (I also added paneer as it’s a cheap protein), then chopped pepper. This curry was a creamy one, so I used reduced fat coconut milk and reduced fat creme fraiche as the base. I then added my seasoning and ground spices to taste: cumin, coriander, curry powder, turmeric, cayenne pepper, chilli powder, and herbs. I also added some desiccated coconut, ground almonds, and a spoonful of peanut butter, and some fresh chillies. Then I just cooked it until it made a lovely, creamy sauce, and served with basmati rice, and loads of fresh coriander because I adore it! Easy, cheap and delicious!
