Indulge in the warmth and coziness of the holiday season with these Gingerbread Surprise Beignets that hide a luscious chocolate truffle inside. Pair them with a Spiced Mocha Hot Chocolate for the ultimate winter treat.
Ingredients: 1 cup all-purpose flour. 2 tbsp cocoa powder. 2 tsp gingerbread spice mix. 1/4 tsp salt. 1/2 cup milk. 1/4 cup granulated sugar. 1 large egg. 1/2 tsp vanilla extract. 12 chocolate truffles for the surprise filling. Oil for frying. Powdered sugar for dusting. Whipped cream optional, for serving. Chocolate shavings optional, for garnish. For Spiced Mocha Hot Chocolate:. 2 cups milk. 2 oz dark chocolate, chopped. 2 tbsp cocoa powder. 2 tbsp granulated sugar. 1/2 tsp ground cinnamon. 1/4 tsp ground nutmeg. 1/4 tsp instant coffee powder. Pinch of salt. Whipped cream optional, for topping. Ground cinnamon and cocoa powder optional, for garnish.
Instructions: Mix the flour, cocoa powder, gingerbread spice blend, and salt in a bowl. Mix the milk, egg, granulated sugar, and vanilla extract in a separate bowl. Blend thoroughly. Stirring constantly, gradually incorporate the dry ingredients into the wet ingredients until a smooth batter forms. After covering the batter, allow it to sit at room temperature for half an hour. Prepare the chocolate truffles by rolling each one in a small amount of flour to help keep it from sticking while the batter rests. Preheat oil in a fryer or deep pan to 175C 350F. Generously cover each chocolate truffle with the gingerbread beignet batter. Ensure that all of the truffle is covered. Drop the coated truffle gently into the heated oil and cook it for three to four minutes, or until it's crispy and golden brown. Using a slotted spoon, remove and place on paper towels to drain. Proceed with the remaining truffles in the same manner. While the chocolate beignets are still warm, dust them with powdered sugar. Heat the milk in a saucepan over medium heat until it starts to steam but doesn't boil for the Spiced Mocha Hot Chocolate. Add chopped dark chocolate, instant coffee powder, granulated sugar, ground nutmeg, ground cinnamon, and a dash of salt and whisk until well combined. Once the chocolate has melted completely and the mixture is smooth, keep whisking. If desired, top the spiced mocha hot chocolate with whipped cream after pouring it into mugs. Add a dash of cocoa powder and ground cinnamon as garnish. For a delightful treat, serve the Spiced Mocha Hot Chocolate with the Gingerbread Surprise Beignets.
