Ingredients: 4 boneless, skinless chicken breasts, cut into 1-inch pieces. 1/2 cup barbecue sauce. 2 tablespoons olive oil. 1 teaspoon paprika. 1 teaspoon garlic powder. 1 teaspoon onion powder. Salt and pepper, to taste. Wooden or metal skewers, soaked in water if wooden.
Instructions: In a bowl, combine barbecue sauce, olive oil, paprika, garlic powder, onion powder, salt, and pepper. Add chicken pieces to the marinade, ensuring they are evenly coated. Cover and refrigerate for at least 1 hour, or overnight for best results. Preheat grill to medium-high heat. Thread marinated chicken onto skewers, leaving a little space between each piece. Place skewers on the preheated grill and cook, turning occasionally, until chicken is cooked through and slightly charred, about 10-12 minutes. Serve hot, garnished with chopped parsley or green onions, if desired.
