Vegan Dynamite Rolls are a delicious twist on traditional sushi, featuring tempura-fried tofu and a spicy mayo sauce.
Ingredients: 1 cup sushi rice, cooked and seasoned. 4 nori seaweed sheets. 1/2 avocado, thinly sliced. 1/2 cucumber, julienned. 1/4 cup vegan mayonnaise. 2 tbsp sriracha sauce. 1 tbsp agave nectar. 1/2 cup tempura-fried tofu, thinly sliced. 1/4 cup pickled ginger. 1/4 cup toasted sesame seeds.
Instructions: Put down a clean bamboo sushi rolling mat. Lay a nori sheet on the mat with the shiny side down. Dressed sushi rice should be spread out thinly over the nori, leaving about an inch of space at the top. Line up slices of avocado, cucumber, and tofu along the bottom edge of the nori. Use the mat to roll the sushi up tightly, and then use water to seal the edge. Put sriracha sauce, agave nectar, and vegan mayonnaise in a bowl and mix them together. Spread the spicy mayo on top of the rolls. Toast some sesame seeds and sprinkle them on top. Cut the rolls into small pieces that you can easily eat. Serve with extra spicy mayo and pickled ginger for dipping.
