You can eat these gluten-free cheddar biscuits with your Thanksgiving meal. They're light, cheesy, and just right for eating.
Ingredients: 2 cups gluten-free all-purpose flour. 1 tablespoon baking powder. 1/2 teaspoon baking soda. 1/2 teaspoon salt. 1/4 cup cold unsalted butter, cubed. 1 cup shredded cheddar cheese. 3/4 cup buttermilk. 2 tablespoons chopped fresh parsley optional.
Instructions: Preheat oven to 425F 220C and line a baking sheet with parchment paper. In a large mixing bowl, whisk together the gluten-free flour, baking powder, baking soda, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in the shredded cheddar cheese. Add the buttermilk and mix until just combined. Be careful not to overmix. Drop spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 12-15 minutes or until golden brown and cooked through. Optional: Sprinkle chopped fresh parsley over the biscuits when they come out of the oven. Serve warm and enjoy!
