These Gochujang Mashed Potatoes are a tasty take on regular mashed potatoes. The spicy-sweet gochujang paste gives them a unique flavor. This is a great side dish for Korean-style meals or a unique addition to your holiday table.
Ingredients: 4 large potatoes, peeled and cubed. 1/4 cup milk. 2 tablespoons butter. 2 tablespoons gochujang paste. Salt to taste. Chopped green onions for garnish.
Instructions: In a pot of salted water, boil the cubed potatoes for about 15 to 20 minutes, or until they are soft. Put the potatoes back in the pot after draining them. To the potatoes, add milk, butter, and gochujang paste. Use a potato masher or fork to mash the potatoes until they are smooth and creamy. Add salt to your liking and mix well. Before serving, sprinkle with chopped green onions.
