True there are many Italian dishes which might rank in the "high-fat" categories but there are even more which are not and which are very healthy for you as well... such as this Italian Whitefish and Pasta.
You can use any type of whitefish for this dish. Whitefish is any type of fish which is fleshy (meaty) and white. Luckily, it is also one of the more economic fish to buy. For best flavor results, you will want to use fresh herbs. The herbs used in this dish can all be grown right in your kitchen or garden. If you are going to use dried herbs, use only half the amount shown in the recipe. This is a very quick dish to prepare at home and when served with some good Italian bread and wine, makes for a wonderful dinner.
Ingredients needed to make Italian Whitefish and Pasta: 1 pound whitefish fillets, cubed
Salt and pepper to taste
1 Tbs. hot sauce
1/4 cup cornstarch
2 Tbs. vegetale oil
1/4 cup olive oil
2 Tbs. butter
2 tsp. minced parsley
2 tsp. minced basil
2 tsp. minced oregano
1/4 cup grated Parmesan cheese
Cooked pasta
Steps: 1) Place the cubed whitefish into a medium bowl and toss with the hot sauce. Let the fish marinate 30 minutes at room temperature.
2) Dredge (coat) the fish with the cornstarch.
3) In a large skillet, heat the vegetable oil over medium heat.
4) Add the fish and cook around 7 minutes, until it has browned. Actual cooking time depends not the thickness and variety of the whitefish.
5) Remove the whitefish from the skillet and set aside. Wipe out the skillet.
6) Place the skillet back over medium heat and melt the butter into the olive oil.
7) Once the oil starts to sizzle, stir in all the herbs and cook 2 minutes.
8) Add the whitefish and cook 2 minutes.
9) Add the Parmesan cheese and stir for 1 minute.
10) Spoon over some freshly made pasta and enjoy!
Dad’s Poached Tilapia
We came up with this recipe while I was visiting my Dad one weekend and it’s pretty damn good. It also takes the edge off the fish taste if you aren’t a fan of it.
What you need:
1 can chicken broth
2 cups orange juice
squirt of sriacha
salt and pepper
couple splashes fish sauce
1 tsp hoisin sauce (optional)
1 tbsp minced garlic
1 tsp sushi ginger, minced
2 bell peppers, sliced into strips
1 small vidalia onion, sliced and halved
1 small zucchini, sliced in quarters
1 small yellow squash, sliced in quarters
4 tilapia fillets and/or 2 swai fillets, bones and skin removed
What you do:
In a large frying or saute pan, combine orange juice, broth, sriacha, salt and pepper, fish sauce, hoisin, ginger, and garlic and allow to reduce. Once liquid level reaches 2/3 or 1/2 original amount, add vegetables and cook until soft but still slightly crunchy. Remove from reduction and place in serving bowl, keeping in oven if needed to keep hot. Season fish with a little salt and pepper and place in liquid, cooking until it begins to flake (definitely get them out of there when the fillets actually start to fall apart). Remove from liquid and place on serving plate, then turn heat down. Add a slurry of 1 teaspoon cornstarch and 1 cup water to remaining liquid and cook until thickened. Pour into vegetables. Serve fish and vegetables over steamed rice and with pesto and soy sauce, if you want.
Rubbed creole seasoning into a swai fish fillet, fried it, and put it on a pub bun with mayo and box pasta on the side. Really hit the spot.
