On a hot summer day, these blueberry popsicles are the perfect way to cool off. They taste great and are vegan-friendly because they are made with fresh blueberries and coconut milk.
Ingredients: 2 cups fresh blueberries. 1/4 cup maple syrup. 1 tablespoon lemon juice. 1 cup coconut milk.
Instructions: Put blueberries, maple syrup, and lemon juice in a blender and blend them together. Mix until it's smooth. Add the coconut milk to the blueberry mix and blend again until everything is well mixed. Place the mix into popsicle molds. Place popsicle sticks inside the molds. It needs to be frozen for at least 4 hours or until it is solid. Just run the molds under warm water for a second to get the popsicles out of them.
