Ingredients: 6 medium potatoes, peeled and diced. 4 hard-boiled eggs, chopped. 1/2 cup diced celery. 1/4 cup chopped green onions. 1 cup mayonnaise. 2 tablespoons Dijon mustard. 1 tablespoon apple cider vinegar. 1 teaspoon sugar. Salt and pepper to taste. Paprika for garnish.
Instructions: For about 10 to 15 minutes, or until the potatoes are soft, boil them in salted water. Let it cool down after draining. Put the cooled potatoes, chopped eggs, celery, and green onions in a large bowl. Put the Dijon mustard, apple cider vinegar, sugar, salt, and pepper in a different bowl and mix them together. Add the dressing to the potato mix and toss it around gently to coat everything. Put it in the fridge for at least an hour before you serve it. As a garnish, sprinkle with paprika right before serving.
