Ingredients: 2 lbs boneless, skinless chicken breasts, cut into 1-inch cubes. 1/2 cup olive oil. 1/4 cup red wine vinegar. 3 cloves garlic, minced. 1 teaspoon dried oregano. 1 teaspoon dried basil. 1/2 teaspoon dried thyme. Salt and pepper to taste. Wooden skewers, soaked in water for 30 minutes.
Instructions: To make the marinade, mix olive oil, red wine vinegar, oregano, basil, thyme, salt, and pepper in a bowl with a whisk. Put the chicken cubes in a shallow dish or a plastic bag that can be closed again, and pour half of the marinade over them. Put the dish or bag in the fridge for at least two hours, or even better, overnight. Warm up the grill over medium-high heat. Put chicken cubes that have been marinated on the wet wooden skewers, leaving a little space between each one. For 10 to 12 minutes, flip the chicken skewers every so often and grill them until the chicken is cooked all the way through and the edges have a nice char. For extra flavor, baste the skewers with the rest of the marinade while they're cooking on the grill. If you want, you can serve the Grilled Chicken Spiedies hot with flatbreads or in sandwich rolls.
