A super healthy and vegan-friendly spinach basil pesto that's dairy-free and gluten-free. Packed with the goodness of spinach and basil, this pesto is perfect for pasta, sandwiches, or as a dip.
Ingredients: 2 cups fresh spinach leaves. 1 cup fresh basil leaves. 1/2 cup raw almonds. 3 cloves garlic, minced. 1/4 cup nutritional yeast. 1/4 cup extra virgin olive oil. 1 tablespoon lemon juice. Salt and pepper to taste.
Instructions: In a food processor, combine the fresh spinach, basil leaves, raw almonds, and minced garlic. Pulse the ingredients until they are finely chopped and well combined. Add the nutritional yeast, extra virgin olive oil, and lemon juice to the mixture. Continue to process until the pesto reaches your desired consistency. Season the pesto with salt and pepper to taste, adjusting as needed.
