Ingredients: 2 cups sweet potatoes, grated. 2 cups fresh spinach, chopped. 1/2 cup all-purpose flour. 2 eggs. 1/4 cup grated Parmesan cheese. 1/4 cup milk. 1/4 cup chopped onion. 1/2 tsp baking powder. 1/2 tsp salt. 1/4 tsp black pepper. Cooking spray or oil for waffle iron.
Instructions: Follow the directions that came with your waffle iron to get it hot. Grate the sweet potatoes and chop the spinach. Add the all-purpose flour, eggs, Parmesan cheese, milk, chopped onion, baking powder, salt, and black pepper to a large bowl. Once all the ingredients are mixed together, mix them well. Spray or oil the waffle iron with a little cooking spray. Put some of the sweet potato mixture on a waffle iron that has already been heated, and spread it out so that it covers the waffle grid evenly. Turn off the heat and let the waffles cook until they are golden brown and crispy. Carefully take the waffles out of the iron, and do it again with the rest of the batter.
