They're great for a light lunch or dinner because they're full of protein-rich white beans, tasty potatoes, and cool toppings. The garlic yogurt sauce makes these tacos taste even better by making them creamy and tangy.
Ingredients: 1 cup cooked white beans. 1 cup diced potatoes. 1 tablespoon olive oil. 1 teaspoon cumin. 1/2 teaspoon paprika. Salt and pepper to taste. 8 small tortillas. 1 cup shredded lettuce. 1/2 cup diced tomatoes. 1/4 cup chopped cilantro. 1/4 cup diced red onion. 1 avocado, sliced. Garlic Yogurt Sauce:. 1 cup plain yogurt. 2 cloves garlic, minced. 1 tablespoon lemon juice. Salt and pepper to taste.
Instructions: Put olive oil in a pan and heat it over medium-low heat. After you add the diced potatoes, cook for 8 to 10 minutes, until they are soft and lightly browned. To the pan, add cumin, paprika, salt, and pepper along with the cooked white beans. Add two to three more minutes and cook until everything is hot. Put everything for the garlic yogurt sauce in a small bowl and mix them together. Put away. You can warm tortillas up in the microwave or a dry pan. Put shredded lettuce, a potato and bean mix, diced tomatoes, chopped cilantro, diced red onion, and avocado slices on top of each tortilla to make a taco.
