This Chipotle Butternut Squash & White Bean Dip is a flavorful and creamy dip perfect for parties or snacking. The combination of roasted butternut squash, white beans, and chipotle peppers creates a smoky and slightly spicy dip that pairs wonderfully with tortilla chips or fresh vegetables.
Ingredients: 1 cup butternut squash, diced. 1 can 15 oz white beans, drained and rinsed. 2 chipotle peppers in adobo sauce, chopped. 2 cloves garlic, minced. 2 tablespoons olive oil. 1 tablespoon lime juice. Salt to taste. Optional toppings: chopped cilantro, crumbled feta cheese, diced tomatoes.
Instructions: Get the oven ready by heating it up to 400F 200C. Spice up a baking sheet by putting diced butternut squash on it and then adding olive oil and salt on top of it. For 20 to 25 minutes, or until soft. Roasted butternut squash, white beans, chipotle peppers, garlic, olive oil, lime juice, and salt should all be put in a food processor. Mix until it's creamy and smooth. If you want, you can add more salt or lime juice to taste. Put the dip in a bowl to serve, and you can add toppings like diced tomatoes, chopped cilantro, or crumbled feta cheese if you want. Dip into it with tortilla chips or vegetable sticks.
