Eggs Royale is a tasty and satisfying breakfast or dinner dish made with toasted English muffins, perfectly poached eggs, smoked salmon, and creamy Hollandaise sauce. It's a fancy treat that will please everyone!
Ingredients: 4 large eggs. 4 slices of smoked salmon. 2 English muffins, split and toasted. Hollandaise sauce. Salt and pepper to taste. Chopped fresh chives for garnish.
Instructions: Poach the eggs: Fill a large saucepan with water and bring it to a simmer. Add a splash of white vinegar to the water. Carefully crack each egg into a small cup or ramekin. Create a gentle whirlpool in the simmering water with a spoon and slide the eggs, one at a time, into the swirling water. Poach for about 3-4 minutes until the egg whites are set but the yolks remain runny. Remove with a slotted spoon and place on a paper towel to drain. Prepare the Hollandaise sauce: If not already prepared, you can use a store-bought Hollandaise sauce or make your own by whisking egg yolks, lemon juice, and melted butter in a heatproof bowl set over a pot of simmering water. Whisk until the sauce thickens. Season with salt and pepper to taste. Assemble the Eggs Royale: Place a slice of smoked salmon on top of each toasted English muffin half. Carefully place a poached egg on top of the salmon. Drizzle Hollandaise sauce generously over the eggs and garnish with chopped chives. Serve immediately and enjoy your delicious Eggs Royale!
