Delecata Squash Onion Fry Up
The skin on delecata squash are so thin, they’re edible. Good to know. This makes fixing them that much less work and adds fiber to my healthy diet. Take advantage of these perks and serve this side dish along with a slice of beef roast and crisp green salad for dinner tonight. Your family will love it...my husband approved, too.
1 delecata squash, split, seeded, sliced into 1/4″ thick crescents
1 lg. sweet onion, halved, sliced into crescents
2 T. margarine
dash salt/pepper
In a large fry pan, saute squash and onion in margarine. Season and enjoy.
