Ingredients: 1 lb beef sirloin, thinly sliced. 2 tablespoons olive oil. 2 onions, thinly sliced. 8 ounces mushrooms, sliced. 4 cloves garlic, minced. 1 teaspoon dried oregano. Salt and black pepper to taste. 4 pita bread rounds. 1 cup Greek yogurt. 1 cucumber, diced. 1 tomato, diced. 1/4 cup crumbled feta cheese. Fresh parsley, chopped for garnish.
Instructions: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the thinly sliced onions and cook until caramelized, stirring occasionally, about 15-20 minutes. Remove from skillet and set aside. In the same skillet, add the remaining tablespoon of olive oil. Add the sliced mushrooms and cook until they release their moisture and become golden brown, about 8-10 minutes. Push the mushrooms to one side of the skillet and add the minced garlic to the empty side. Cook for about 30 seconds until fragrant, then mix with the mushrooms. Season the beef slices with dried oregano, salt, and black pepper. Add the seasoned beef to the skillet and cook until browned and cooked through, about 3-4 minutes per side. Warm the pita bread rounds in a toaster or oven. To assemble the pitas, spread a spoonful of Greek yogurt on each pita, then top with caramelized onions, cooked beef slices, mushrooms, diced cucumber, diced tomato, and crumbled feta cheese. Garnish with chopped fresh parsley. Fold the pitas in half and serve immediately.
