Ingredients: 2 cups all-purpose flour. 1/4 cup granulated sugar. 1 tablespoon baking powder. 1/2 teaspoon salt. 1/2 cup vegan butter, cold and cubed. 3/4 cup unsweetened almond milk. 1 teaspoon vanilla extract. 1 cup fresh strawberries, diced. 1/4 cup creamy peanut butter.
Instructions: Preheat your oven to 425F 220C. In a large mixing bowl, combine flour, sugar, baking powder, and salt. Cut in the cold vegan butter using a pastry cutter or fork until the mixture resembles coarse crumbs. Add almond milk and vanilla extract, stirring until just combined. Fold in diced strawberries gently. Drop spoonfuls of dough onto a baking sheet lined with parchment paper. Bake for 12-15 minutes or until lightly golden.
