Ingredients: 1 lb ground pork. 1 lb ground beef. 1/2 cup almond flour. 2 eggs. 1/4 cup grated Parmesan cheese. 2 cloves garlic, minced. 1 tsp onion powder. 1 tsp dried oregano. Salt and pepper to taste. 2 tbsp olive oil. 1/2 cup beef broth. 1 cup heavy cream. 1/4 cup sour cream. 2 tbsp Dijon mustard. 2 tbsp chopped fresh parsley for garnish.
Instructions: Turn on the oven and heat it up to 400F 200C. Put almond flour, eggs, Parmesan cheese, minced garlic, onion powder, dried oregano, salt, and pepper in a large bowl. Mix in the ground pork and beef. Mix everything together well. Cut the meat into balls and put them on a baking sheet with parchment paper on the bottom. Place the meatballs in an oven that has already been heated up. Bake for 20 to 25 minutes, or until they are fully cooked and browned on the outside. Make the stroganoff sauce while the meatballs are in the oven. Put olive oil in a pan and heat it over medium-low heat. Heavy cream, sour cream, beef broth, and Dijon mustard should all be added to the pan. Mix things together well. Move the meatballs to the skillet with the stroganoff sauce when they are done baking. Allow the flavors to blend and the sauce to get thicker by simmering for another 10 to 15 minutes. You can use cauliflower rice or zucchini noodles to serve the meatballs with stroganoff sauce. Before serving, sprinkle with chopped fresh parsley.
