Ten 2 Thin: #1 Red Onion Quiche (a Struggle kitchen production)
Now many people are probably saying, "now Ry! How can you eat a quiche on your diet?" Well it took some creativity but it is outstanding. Now it is a SKP recipe because, well the crust and the fact that I didn't have a pie tin like I usually make Quiche in.
1/2 Medium Red Onion, Cut thin
1/4 Cup Coconut Cream (or Almond Milk or Regular Milk . . . it is what I had)
1 Tablespoon Black Pepper
1/4 Cup Grated Raw Cheddar
In a Baking Dish or Pie Tin, coat with coconut oil. Then place one wrap one way and the other going the other way, press down, there will be some folds as it doesn't perfectly fit, just try to decrease them.. In a bowl add the Milk, whole eggs, egg whites, and Black Pepper stir together til it becomes one mixture. Place some onions into the bottom of the crust, then add egg mixture, add remaining onion to top of mixture. Cover with the grated cheese, salt and pepper.
In a 350 oven cook for 40-45 minutes or until the mixture no longer moves when shaken. Remove and let sit for 5 minutes then serve. It is great served with Fresh Cherries and is great reheated.
