Carol Cross: Pyrite, symbolizing protection of assets and wealth generation. Initially I had trouble finding a gem that matches her personality until I read on the wiki that she's "the Clan's loan shark". This was news to me so I looked deeper. They got that idea from a scene in the SBO path where she's threatening the hell out of another Toppat who owes her or the clan money. Now I know why they say not to cross her.

Speaking of which...

Stu Pendles: Black Onyx, which can symbolize responsibility and self discipline. Brother, of all the people you borrow money from you chose Carol freaking Cross. You're going to need all the financial responsibility you can get. I know the symbolism is ironic but man...

Headcanon: Whitehead and Stu Pendles are brothers. Stu picked a hat like Whitehead’s to mess with him. It also sometimes helps him avoid Carol Cross.

Well that's sweet of Whitehead to take the heat for Stu from time to time... but Carol is probably gonna catch on. I highly doubt she's a dumb girl

(Now I'm imagining her saying "Do you think I look stupid or something!?" and someone very STUPIDLY saying yes... and they were never heard from again XD)

Just for fun (and also cause of their hats) I headcanon that Stu Pendles and Whitehead are brothers. Stu learned to mimic his brother’s voice and despite them not being twins, they look similar enough, so Stu gets away with it some of the time.
