Ingredients: 2 flounder fillets. 1/2 cup cooked crab meat. 1/2 cup cooked shrimp, chopped. 1/4 cup breadcrumbs. 2 tablespoons grated Parmesan cheese. 2 tablespoons mayonnaise. 1 tablespoon chopped fresh parsley. 1 teaspoon lemon juice. Salt and pepper to taste. 1 tablespoon olive oil.
Instructions: Preheat oven to 375F 190C. In a bowl, mix together crab meat, shrimp, breadcrumbs, Parmesan cheese, mayonnaise, parsley, lemon juice, salt, and pepper. Lay flounder fillets flat and divide the seafood stuffing evenly between them, spreading it over each fillet. Roll up the fillets and secure with toothpicks if necessary.
