Ripe plantains are combined with a tasty ground beef and pepper filling to create Canoas de Platanos, or Stuffed Plantains, a delectable Paleo dish. This dish is a great option for a Paleo dinner because it's flavorful and simple to prepare.
Ingredients: 2 ripe plantains. 1/2 pound ground beef. 1/2 onion, chopped. 2 cloves garlic, minced. 1/2 red bell pepper, chopped. 1/2 green bell pepper, chopped. 1/2 teaspoon cumin. 1/2 teaspoon paprika. Salt and pepper to taste. 2 tablespoons avocado oil. 1/2 cup fresh cilantro, chopped. 1 avocado, sliced. Lime wedges for garnish.
Instructions: Set the oven's temperature to 375F 190C. Trim the ends from the plantains, then cut a slit along the peel that is lengthwise without slicing the plantain in half. Peel the plantains with care. Heat the avocado oil in a skillet over medium heat. Add the minced garlic and onion, and saut them until they are transparent. When the ground beef is added to the skillet, cook it until it browns. Add the paprika, cumin, pepper, salt, and chopped red and green bell peppers. Simmer the peppers for a further five minutes, or until they are soft. Make a tiny indent in each plantain by scooping out some of the flesh. Keep the meat that was scooped out for later use. Gently press the filling down to cram as much of the beef and pepper mixture as possible into each plantain. After placing the filled plantains in a baking dish, bake them for 20 to 25 minutes in a preheated oven, or until they become soft and start to turn golden. Serve with wedges of lime and avocado, garnished with fresh cilantro. Savor your Plantains with Paleo Stuffing!
