Ingredients: 1 cup butter, softened. 1 cup granulated sugar. 2 teaspoons lemon zest. 2 tablespoons fresh lemon juice. 1 teaspoon vanilla extract. 2 cups all-purpose flour. 1/2 teaspoon baking powder. 1/4 teaspoon salt. 1/2 cup powdered sugar for coating.
Instructions: Preheat the oven to 350F 175C. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the lemon zest, lemon juice, and vanilla extract. Mix until well combined. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. Roll tablespoon-sized portions of dough into balls. Place the powdered sugar in a shallow bowl. Roll each dough ball in the powdered sugar to coat it generously. Place the coated dough balls on a baking sheet lined with parchment paper, spacing them about 2 inches apart. Using the bottom of a glass or your palm, gently flatten each dough ball to about 1/2-inch thickness. Bake in the preheated oven for 10-12 minutes, or until the edges of the cookies are set and just beginning to turn golden.
