Pan grilled Chicken, with sumac, lemons, as garlic. It was a different spice that I had not personally cooked with and I LoVe It! If you’ve never tried sumac, you should. It has a lemony and sour undertone but it’s super delicious and delicate. I parked it with crispy garlic and cilantro rice, charred broccoli, and fried plantains and pikliz. Chicken with Sumac Spice Musakhan is a traditional Palestinian dish made with soft chicken thighs that have been marinated in a tasty mix of spices, such as paprika, cumin, coriander, and sumac. After being seared to perfection, the chicken is placed on top of a bed of caramelized onions and baked on Arabic flatbreads until it is juicy and smells great. Toasted pine nuts give it a great crunch, and fresh parsley gives it a splash of color and a clean taste.

Ingredients: 4 chicken thighs. 2 tablespoons sumac. 1 teaspoon ground cumin. 1 teaspoon ground coriander. 1 teaspoon paprika. Salt to taste. Black pepper to taste. 2 tablespoons olive oil. 1 large onion, thinly sliced. 2 large Arabic flatbreads such as taboon or khubz, or substitute with pita bread. 2 tablespoons pine nuts, toasted. Fresh parsley, chopped, for garnish.

Instructions: Warm the oven up to 190C 375F. Salt, black pepper, cumin, coriander, and sumac should all be mixed together in a small bowl. Cover the chicken thighs with the spice mix and rub it all over. Put olive oil in a big skillet and heat it over medium-high heat. It will take about 34 minutes per side to brown the chicken thighs on both sides after you add them. Take it out of the pan and set it aside. Slice the onions and put them in the same pan. Cook for about 10 minutes, or until they are soft and caramelized. Make a baking sheet and put the flatbreads on it. Put the onions that have been caramelized on top of the flatbreads. On top of the onions, put the chicken thighs that have been seared. On top of the chicken, toast the pine nuts briefly. The chicken should be cooked all the way through after 20 to 25 minutes in a hot oven. Add chopped parsley as a garnish before serving.
