These Thai-inspired turkey burgers are packed with flavor and topped with a refreshing cucumber pepper relish and a kick of spicy mayo. They are perfect for a summer barbecue or a delicious weeknight dinner.
Ingredients: 1 lb ground turkey. 1/4 cup breadcrumbs. 2 cloves garlic, minced. 2 green onions, finely chopped. 1/4 cup cilantro, chopped. 1 tsp ginger, grated. 1 tsp soy sauce. 1/2 tsp fish sauce. 1/2 tsp red pepper flakes. 1 cucumber, thinly sliced. 1 red bell pepper, thinly sliced. 1/4 cup rice vinegar. 1/4 cup mayonnaise. 1 tbsp Sriracha sauce. 4 burger buns. Lettuce leaves for garnish. Salt and pepper to taste. Vegetable oil for grilling.
Instructions: Put ground turkey, breadcrumbs, chopped green onions, cilantro, ginger that has been grated, soy sauce, fish sauce, and red pepper flakes in a bowl. Mix it well, then shape it into 4 burger patties. Warm up the grill over medium-high heat. Add salt and pepper to the burger patties and brush them with vegetable oil. The turkey patties should be cooked on both sides for four to five minutes, or until they are done and no longer pink in the middle. You can make the cucumber pepper relish while the burgers are cooking on the grill. Cut the cucumber, red bell pepper, and rice vinegar into thin slices and put them in a different bowl. Mix it up and set it aside. To make the spicy mayo, mix the Sriracha sauce and mayonnaise in a small bowl. Take the burgers off the grill when they're done and let them rest for one minute. Put the burger buns on the grill and toast them for one to two minutes, until they get a little brown. Spread a lot of spicy mayo on the bottom half of each bun before putting the burgers together. On top of the mayo, put a turkey burger patty. Then, add lettuce leaves and a big scoop of cucumber pepper relish. Place the other half of the bun on top of each burger and use a toothpick to hold it in place if necessary. Enjoy the Thai turkey burgers with extra relish on the side.
