Ingredients: 1/2 pound cooked shrimp, peeled and deveined. 2 ripe avocados, diced. 4 cups mixed greens e.g., lettuce, spinach, arugula. 1/4 cup cherry tomatoes, halved. 2 tablespoons chopped red onion. 1/4 cup chopped cucumber. 2 tablespoons chopped cilantro. 1/4 cup roasted peanuts, chopped optional. 1/4 cup crumbled feta cheese optional.
Instructions: In a large salad bowl, combine the mixed greens, cherry tomatoes, red onion, cucumber, and cilantro. Add the diced avocados and cooked shrimp to the salad bowl. In a small bowl, whisk together the miso dressing ingredients see below. Drizzle the miso dressing over the salad and toss gently to coat all the ingredients.
