This Italian Pasta Salad is a refreshing and delicious summer side dish. It's loaded with colorful ingredients and dressed in zesty Italian dressing, making it perfect for picnics, BBQs, or any outdoor gathering.
Ingredients: 8 oz about 2 cups rotini pasta. 1 cup cherry tomatoes, halved. 1/2 cup black olives, sliced. 1/2 cup mozzarella cheese, cubed. 1/4 cup red onion, finely chopped. 1/4 cup fresh basil leaves, chopped. 1/4 cup Italian dressing. Salt and pepper to taste.
Instructions: Cook the rotini pasta according to package instructions until al dente. Drain and rinse with cold water. In a large bowl, combine the cooked pasta, cherry tomatoes, black olives, mozzarella cheese, red onion, and fresh basil. Pour the Italian dressing over the salad and toss to coat all the ingredients evenly. Season the salad with salt and pepper to taste. Cover the bowl and refrigerate for at least 1 hour to let the flavors meld together. Serve chilled and enjoy!
