Summertime Recipes: Here are 2 recipes that young and old alike can enjoy when it gets hot out this summer.
Ice cream and popsicles are practical and easy to prepare.
A good tip for entertaining during the summer is to prepare simple recipes that you can have either at home or at the lake. These 2 recipes you can even have your children help make them. I hope that you enjoy them!
Summertime Recipes: Fruit Popsicle
Yield: 12 servings.
Preparation time: 10 minutes.
Freezer time: 4 hours.
Ingredients:
1 medium apple cut into small cubes
1 small banana cut into small cubes
2 tablespoons cherries cut into small cubes
1 cup soy juice strawberry flavor
12 wooden popsicle sticks or toothpicks
Preparation:
In a bowl, mix the apple and banana with cherries and strawberry flavor juice. Place in a form for ice cubes and stick a toothpick in the center of each cube. Freeze for 4 hours or until firm. Carefully remove the form and serve. You can also use dixie cups if you want popsicles that are bigger.
Variation:
You can use any fruit combination that you prefer and also any flavor of juice will work.
Tip:
You can make refreshing drinks from the popsicles. Make the popsicles in advance leaving out the toothpicks. Place a few of the popsicles into a tall glass and fill with 7-up or drink of your choice. Stir and serve immediately.
Summertime Recipes: Strawberry Ice Cream
Yield: 4 servings.
Preparation time: 1 hour.
Freezer time: 3 hours.
Ingredients:
1/2 cup strawberry flavored syrup
2 cups of milk
5 tablespoons sugar
3 egg whites
How to prepare:
In a saucepan, dissolve the strawberry flavored syrup and milk. Add 2 tablespoons of sugar and cook over medium heat, stirring constantly until thickened. Set aside until cooled. In another saucepan combine the egg whites and remaining sugar. Place in a water bath over boiling water stirring constantly for 5 minutes or until mixture is warm and the sugar has melted. Put the mixture in the mixer and beat for 5 minutes or until firm peaks form. Mix the reserved cream stirring gently. Place in medium size dish and freeze for 3 hours or until firm. Remove from freezer and using mixer mix on low speed and beat until creamy. Return to the freezer and keep in the freezer until ready to serve.
You can make chocolate ice cream by using chocolate syrup instead of the strawberry.
