Here’s something I cooked up yesterday:
Banana Pudding Pops!
They are super simple to make and are a great summertime snack! What you’ll need, as pictured in photo #1: - 1 Box (3.9 ounce) Instant Banana Pudding mix - 2 cups of COLD milk (1% or 2% is best but you can use whichever you prefer) - 1 sleeve Trefoil Girl Scout cookies, approximately 18 cookies (I know most people don’t just have these lying around but any shortbread cookie will work) - 3 tbsp. unsalted butter - 1 silicone cake/brownie pop tray (This was most convenient for me but as pictured i did have left over ingredients that i put in small Temptations bowls. If you don’t have these its fine just make sure you put the pops into something you can put in the oven. I find silicone works very well during removal) - Appr. 10 Sticks of some sort to turn these into pops. (I used cake pop sticks, but long toothpicks work as well)
Step 1: Preheat your oven to 350 degrees. Step 2: Follow the directions on the pudding box, adding the cold milk to the mix, whisking for 2 minutes and then let it set for at least 5 minutes. Put to the side. Step 3: Place your cookies into a Ziploc bag. Crush the cookies until they are all evenly crumbled. A rolling pin was my weapon of choice but if you don’t have one a heavy book or even your fists will do fine. The fists might hurt after a while though. Pour the cookie crumble into a bowl. Step 4: Melt your butter in a microwave safe bowl, then pour into the cookie crumble. Mix well. Step 5(picture #2): Use your fingers to press the cookie crumble along the edges of the molds. Make sure to coat as evenly as you can and get it as high along the mold as you can. Don’t worry if its not perfect. Nothing in life is. Step 6: Once you’ve finished place the silicone tray and any additional oven safe bowls onto a cookie sheet and bake in the oven for 10 minutes. This allows the cookie to set and firm up. Step 7(picture #3): After 10 minutes, take them out of the oven and allow them to fully cool. Step 8(picture #4): Add your banana pudding mix to the molds. You may have leftover pudding, but you can place that in a container and save for later or just eat it, like i did. Step 9: Put a stick in each pop. They should stay straight up, but again if they aren’t perfectly straight don’t worry. Step 10: Place in the freezer for a minimum of 4 hours.
Tada! They are done! (the rest of the photos now) The silicone is great because you just fold it down and the pops just pop right out! One of the great things about this recipe is the versitility of it. If you hate banana pudding, use any other flavor! The cookies as well, shortbreads work really well but you can also do crushed oreos or graham crackers. If you are trying to go healthier, you can use a sugar free pudding OR yogurt, though that will be another tutorial for the future.
