Because I'm so busy during the week, and when I get busy I get tempted to take the easy way out and eat stuff that isn't good for me, I spend some time on Sunday making food for the week. I thought you guys might want to see an example of what that entails.
Roasted two pounds of baby carrots (toss with olive oil and chili powder, roast in 400 degree oven until nicely caramelized)
Baked a spaghetti squash (microwave until the skin is soft enough to pierce with a knife--mine usually crack open from the pressure and that's when I take them out--cut in half, scoop out seeds, bake facedown in a pan at 375 degrees for 45 minutes or until done)
Browned a pound of ground pork to use as "sausage" (brown in pan with fat--I used coconut oil--and seasonings of your choice. I used sage, marjoram, salt, pepper, and red pepper flakes)
Roasted two pounds of mushrooms (cut into quarters or sixths if it's a big mushroom, toss with olive oil and acid of choice such as red or white wine or lemon juice, season with salt, pepper, herbs of choice. Because these are going to be used with the spaghetti I went with red wine and thyme and oregano)
Baked two giant sweet potatoes for my nightly carb ration
Made mini crab quiche (mix can of crab meat--I used Trader Joe's--with a little Dijon, a little horseradish, salt and pepper and thyme, drop by spoonfuls into greased muffin tin--I make nine because I like a lot of crab but you could stretch it to twelve--and then beat 5 eggs and pour over crab. If making twelve up the eggs obviously. My rule is I use one less egg for the number of quiche I'm making, so 12 quiche would be 11 eggs. Bake at 350 for ~15 minutes. They will puff up high and then collapse when you take them out. These are great with any ingredients, like pre-cooked bacon or sausage, leftover sauteed veggies, or cheese. They warm up nicely and are also good cold. Make sure you grease the pan, even if it is non-stick!)
And just to balance that all out, I whipped some cream to frost the tres leches cake I made yesterday (my mom's request for today) and I licked the beater and the bowl. :)
