Ingredients: 2 lbs pork ribs, cut into individual pieces. 1 cup granulated sugar. 1/4 cup fish sauce. 1/4 cup soy sauce. 1 tablespoon oyster sauce. 4 cloves garlic, minced. 1 shallot, finely chopped. 1 teaspoon black pepper. 2 tablespoons vegetable oil. 2 cups water. Green onions and cilantro for garnish.
Instructions: In a heavy-bottomed pan, heat vegetable oil over medium heat. Add sugar to the pan and let it caramelize until it turns a rich golden brown, stirring occasionally. Carefully add pork ribs to the caramelized sugar, coating them evenly. Add minced garlic and chopped shallot to the pan, sauting until fragrant. Pour in fish sauce, soy sauce, and oyster sauce. Stir well to combine. Season with black pepper and continue cooking for 2-3 minutes. Pour in water and bring the mixture to a boil. Reduce heat to low, cover, and simmer for 1.5 to 2 hours, or until the pork ribs are tender and the sauce has thickened. Garnish with sliced green onions and cilantro before serving.
