Super seed granola, oh my!
If you are into chia and amaranth, this is your dream granola. Gluten free and filled with nutty goodness, enjoy this simple recipe.
I learned about this granola while on a trip to the Riviera Maya. It contains a mix of delicious and healthy seeds that are known for their health benefits. Credit is due to Chef Edgar Chavez of the Belmond Maroma resort in Mexico.
Sweetened with pure 100% maple syrup, it can be a little pricey to make, but trust me, it’s worth it.
5 1/4 cups of oats
3/4 cup amaranth
1 cup of chia seeds
1 cup walnut
1 3/4 cup sunflower seed
1 1/2 cup pumpkin seed
2 1/2 maple syrup
1 1/2 cup of vegetable oil
1/2 cup vanilla
Procedure:
Mix all ingredients well. Place in a baking pan lined with parchment paper. Bake at 325, mix every 15 min to prevent clumping. Cook for 30-60min
Store in a covered container, and keep in a cool, dry place. Eat it by itself as a trail mix, mix in yogurt, and enjoy the health benefits of the super seeds.
