Super Onigiri is a tasty and healthy take on the traditional Japanese rice ball. These vegan onigiri are great for a quick and filling meal or snack because they are full of quinoa, vegetables, and a tasty soy sesame dressing.
Ingredients: 2 cups cooked sushi rice. 1/2 cup cooked quinoa. 1/2 cup diced cucumber. 1/2 cup shredded carrots. 1/4 cup sliced avocado. 2 tablespoons chopped green onions. 2 tablespoons soy sauce. 1 tablespoon rice vinegar. 1 tablespoon sesame oil. 1 teaspoon sesame seeds. Nori sheets, cut into strips.
Instructions: Avocado, green onions, cucumber, quinoa, and sushi rice should all be mixed together in a bowl. Mix soy sauce, rice vinegar, and sesame oil in a small bowl with a whisk. Pour over the rice and mix it all together by tossing. Take a little of the rice mix and roll it into a ball. Put a strip of nori around the rice ball's middle. Do it again with the rest of the rice mixture and nori strips. Spread sesame seeds on top of the sushi roll. Serve and have fun!
