These stuffed baked apples are a delightful plant-based treat, perfect for a cozy dessert or a sweet snack. They are filled with wholesome ingredients like oats, nuts, and dried fruits, making them nutritious and satisfying. Plus, they're easy on the wallet!
Ingredients: 4 large apples. 1/2 cup rolled oats. 1/4 cup chopped nuts such as almonds or walnuts. 2 tablespoons maple syrup. 1 teaspoon cinnamon. 1/4 teaspoon nutmeg. 1/4 cup raisins or chopped dried fruits. 2 tablespoons vegan butter or coconut oil, melted. 1/4 cup apple juice or water.
Instructions: Before you start cooking, heat the oven to 375F 190C. Clean and core the apples, but don't cut off the bottoms so that they look like bowls. Put chopped nuts, maple syrup, cinnamon, nutmeg, and raisins in a bowl. Then mix the rolled oats and nuts together. Put some of the oat mixture inside each cored apple and gently press it down to make it fit. Use a baking dish to put the stuffed apples in. Put vegan butter or coconut oil that has been melted on top of the stuffed apples. Fill the baking dish with water or apple juice. Put foil over the dish and bake for 25 to 30 minutes, or until the apples are soft. Take off the foil and bake the apples for another 5 to 10 minutes, until the tops are just starting to turn brown. If you want, you can serve it warm with a scoop of vegan vanilla ice cream or a dollop of coconut whipped cream.
