Ingredients: 2 cups sushi rice. 2 1/2 cups water. 1/2 cup rice vinegar. 2 tablespoons sugar. 1 teaspoon salt. 4 nori seaweed sheets. 1 cucumber, julienned. 1 avocado, thinly sliced. 8 ounces sushi-grade raw salmon, thinly sliced. Soy sauce, for serving. Pickled ginger, for serving. Wasabi, for serving.
Instructions: Rinse sushi rice in cold water until water runs clear. Drain well. In a saucepan, combine rice and water. Bring to a boil, then reduce heat to low and simmer covered for 20 minutes, or until rice is tender and water is absorbed. In a small saucepan, combine rice vinegar, sugar, and salt. Heat over low heat until sugar dissolves. Remove from heat and let cool. Transfer cooked rice to a large bowl. Gradually fold in the vinegar mixture until rice is seasoned. Allow rice to cool to room temperature. Place a nori sheet shiny side down on a bamboo sushi mat. Spread a thin layer of sushi rice evenly over the nori, leaving a 1-inch border at the top. Arrange cucumber, avocado, and salmon slices horizontally across the center of the rice. Roll the sushi tightly using the bamboo mat, sealing the edge with water. Repeat with remaining ingredients. Slice each sushi roll into 6-8 pieces using a sharp knife dipped in water. Serve sushi with soy sauce, pickled ginger, and wasabi.
