Ingredients: 2 cups almond flour. 1/4 cup coconut oil, melted. 1/4 cup maple syrup. 1 tsp vanilla extract. 1 tsp cinnamon. Pinch of salt.
Instructions: Turn the oven on to 350 degrees Fahrenheit 175 degrees Celsius and place parchment paper on a baking sheet. Almond flour, melted coconut oil, maple syrup, cinnamon, vanilla extract, and a small pinch of salt should all be combined in a mixing bowl. Stir to form a dough. Roll the dough into a rectangle that is about 1/4 inch thick by placing it between two sheets of parchment paper. Evenly sprinkle the rolled-out dough with cinnamon. Starting from one of the long edges, carefully roll the dough into a log. Cut the log into 1/2-inch-thick cookies, then arrange them on the baking sheet that has been preheated. Bake for ten to twelve minutes, or until the edges of the cookies are golden brown. After a few minutes of cooling on the baking sheet, move the cookies to a wire rack to finish cooling.
