Finally getting posting again over there.

This was last night's supper, and it really did turn out magically delicious for something that beige. 😹

Mr. C went right back for another huge bowl. But, it's hard to go too wrong there with dill and any kind of cream. (Which not incidentally show up A LOT in Swedish cuisine, yeah.)

Simple ingredients required here, and not that much effort. (Potatoes not shown, because they were still in the sink.) But, it'll give you like 6 big bowls of soup with a whole lot of flavor and probably a vitamin or two, without breaking the bank.

Nana’s Devil’s Food Cake (Gluten Free) - Swedabilly Kitchen

This is not from my Nana, though cakes were sort of her Thing--but from some random person on the internet's Nana. But, she had the right idea here.

These turned out sooo good, y'all! They may not be very photogenic, as dark and chocolatey as they came out. But, this was exactly what I needed for a slightly belated birthday treat. The fudgy peanut butter icing was just right on them too.

This cake should also be easy enough to make vegan, with suitable milk and egg substitutes. It already uses oil. I would definitely suggest trying this the next time you're in the mood for CHOCOLATE.

Creamy Spinach, Mushroom, and Leek Oat “Risotto” - Swedabilly Kitchen

I picked up some mushrooms, leeks, and baby spinach on sale, at the same time as a fresh box of the havreris that I have come to love here.

Another one finally posted from the recent backlog. For people who can't get the oats, I did include directions for subbing rice or buckwheat.

This turned out good enough that I may have to try repeating a version with buckwheat too. Though, I thought the slight chewiness of the "oat rice" worked particularly well here.
