These cool popsicles have the sweetness of watermelon, the sour flower notes of hibiscus, and the energizing kick of fresh ginger and mint. Great for hot summer days or any time you want a healthy, cool treat!
Ingredients: 2 cups diced watermelon. 1/4 cup fresh mint leaves. 2 tablespoons dried hibiscus flowers. 1 tablespoon grated fresh ginger. 1/4 cup honey or agave syrup. 1/2 cup water.
Instructions: In a small saucepan, combine water, honey or agave syrup, grated ginger, and dried hibiscus flowers. Bring the mixture to a simmer over medium heat, stirring occasionally until the sweetener is dissolved. Remove from heat and let it steep for 10-15 minutes to infuse the flavors. Strain the mixture to remove ginger and hibiscus flowers. In a blender, combine diced watermelon, fresh mint leaves, and the infused ginger-hibiscus syrup. Blend until smooth. Pour the mixture into popsicle molds. Insert popsicle sticks and freeze for at least 4 hours or until solid. To remove popsicles from molds, run under warm water for a few seconds and gently pull out.
