A delicious twist on the classic chicken salad sandwich, these Honey Dijon Chicken Salad Burgers are packed with flavor and perfect for a summer cookout.
Ingredients: 1 lb ground chicken. 1/4 cup breadcrumbs. 1/4 cup grated Parmesan cheese. 1/4 cup honey Dijon dressing. 1/4 cup chopped red onion. 1/4 cup chopped celery. 1/4 cup chopped green bell pepper. Salt and pepper to taste. 4 hamburger buns. Lettuce leaves. Tomato slices. Sliced red onion. 4 slices Swiss cheese. Mayonnaise optional.
Instructions: In a mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, honey Dijon dressing, chopped red onion, chopped celery, and chopped green bell pepper. Season with salt and pepper to taste. Divide the chicken mixture into 4 equal portions and shape them into burger patties. Preheat your grill or stovetop griddle over medium-high heat. Grill the chicken patties for about 5-6 minutes per side or until they are cooked through and have nice grill marks. During the last minute of grilling, place a slice of Swiss cheese on top of each patty and allow it to melt. While the patties are cooking, lightly toast the hamburger buns on the grill or in a toaster. To assemble the burgers, spread mayonnaise if desired on the toasted buns. Place lettuce leaves on the bottom bun, followed by a chicken patty with melted Swiss cheese. Add tomato slices and sliced red onion on top of the chicken patty.
