These sweet potato home fries are a delightful twist on the classic potato side dish. They're crispy on the outside, tender on the inside, and bursting with flavor from the paprika and garlic powder.
Ingredients: 2 sweet potatoes, diced. 2 tablespoons olive oil. 1 teaspoon paprika. 1/2 teaspoon garlic powder. Salt and pepper to taste. Fresh parsley, chopped optional, for garnish.
Instructions: Preheat oven to 425F 220C. In a large bowl, toss diced sweet potatoes with olive oil, paprika, garlic powder, salt, and pepper until evenly coated. Spread the seasoned sweet potatoes in a single layer on a baking sheet lined with parchment paper or aluminum foil. Bake in the preheated oven for 20-25 minutes, or until sweet potatoes are tender and golden brown, stirring halfway through cooking. Once cooked, remove from the oven and garnish with chopped fresh parsley, if desired. Serve hot as a delicious side dish or snack.
