With maple syrup and warm spices, this Sweet Potato Apple Bake tastes great with both sweet potatoes and apples. It goes well with any meal or as a comforting dessert.
Ingredients: 2 large sweet potatoes, peeled and thinly sliced. 3 medium apples, cored and thinly sliced. 1/4 cup maple syrup. 2 tablespoons coconut oil, melted. 1 teaspoon ground cinnamon. 1/2 teaspoon ground nutmeg. 1/4 teaspoon ground ginger. 1/4 cup chopped pecans or walnuts optional.
Instructions: Preheat the oven to 375F 190C. In a large bowl, combine sweet potato slices and apple slices. In a small bowl, whisk together maple syrup, melted coconut oil, cinnamon, nutmeg, and ginger. Pour the maple syrup mixture over the sweet potato and apple slices. Toss until evenly coated. Transfer the mixture to a baking dish and spread it out evenly. Cover the baking dish with foil and bake for 30 minutes. Remove the foil and sprinkle chopped nuts if using over the top. Bake for an additional 15-20 minutes, or until the sweet potatoes are tender. Serve warm and enjoy!
