There's a raspberry jam explosion with every bite of these adorable little donuts. Perfect as a sweet snack or for breakfast!
Ingredients: 2 cups all-purpose flour. 1/4 cup granulated sugar. 2 tsp baking powder. 1/2 tsp salt. 1/2 cup milk. 2 large eggs. 2 tbsp unsalted butter, melted. 1 tsp vanilla extract. Raspberry jam for filling. Vegetable oil for frying. Powdered sugar for dusting.
Instructions: Mix the flour, sugar, baking powder, and salt together in a mixing bowl. Mix the melted butter, eggs, milk, and vanilla extract in a separate bowl. Mixing until just combined, pour the wet ingredients into the dry ingredients. Avoid over-mixing. In an immersion fryer or saucepan, bring vegetable oil to a temperature of 350F 175C. Spoonfuls of the donut batter should be dropped into the heated oil and fried for two to three minutes on each side, or until golden brown. To get rid of extra oil, remove the fried donut bites and drain them on paper towels. When the doughnuts are cool enough to handle, pipe raspberry jam into each bite using a tiny piping bag.
