Ingredients: 500g mixed seafood such as shrimp, squid, and mussels. 2 tablespoons Thai red curry paste. 400ml coconut milk. 1 tablespoon fish sauce. 1 tablespoon palm sugar. 1 red bell pepper, sliced. 1 onion, sliced. 1 cup cherry tomatoes. Handful of Thai basil leaves. 2 tablespoons vegetable oil.
Instructions: In a large pan, heat vegetable oil over medium heat. Add Thai red curry paste and cook for 1-2 minutes until fragrant. Pour in coconut milk, fish sauce, and palm sugar. Stir to combine. Add sliced bell pepper, onion, and cherry tomatoes. Simmer for 5 minutes until vegetables are slightly tender. Add mixed seafood and cook for an additional 5-7 minutes until seafood is cooked through. Garnish with Thai basil leaves before serving. Serve hot with steamed rice.
