Roasted chili-lime cauliflower, quinoa, black beans, corn, cilantro, and avocado make up this tasty and healthy bowl.
Ingredients: 1 medium head cauliflower, chopped into florets. 2 tablespoons olive oil. 2 tablespoons lime juice. 1 teaspoon chili powder. 1/2 teaspoon smoked paprika. 1/2 teaspoon cumin. Salt and pepper, to taste. 1 cup cooked quinoa. 1 can black beans, drained and rinsed. 1/2 cup corn kernels. 1/4 cup chopped cilantro. 1 avocado, sliced.
Instructions: Turn on the oven and heat it up to 400F 200C. Sprinkle the cauliflower florets with salt, pepper, chili powder, smoked paprika, and lime juice. Put them in a large bowl and toss them around with the oil and juice. Place the cauliflower on a baking sheet and roast it for 25 to 30 minutes, or until it's soft and a little charred. The quinoa, black beans, corn, cilantro, and avocado slices should all be put in separate bowls. Serve right away and enjoy!
