Ingredients: 2 cups heavy cream. 1 cup whole milk. 3/4 cup granulated sugar. 1/2 cup buttermilk. 1 teaspoon vanilla extract. 1 cup chopped blackberries. 1/2 cup mini chocolate chips. 1 cup pancake mix.
Instructions: In a mixing bowl, whisk together heavy cream, whole milk, granulated sugar, buttermilk, and vanilla extract until sugar is dissolved. Pour mixture into an ice cream maker and churn according to manufacturer's instructions. While churning, mix blackberries and mini chocolate chips into the ice cream mixture during the last 5 minutes of churning. In a separate bowl, prepare pancake mix according to package instructions. Once the ice cream has finished churning, transfer it into a freezer-safe container, alternating layers with dollops of pancake mix. Freeze the ice cream for at least 4 hours or until firm. Serve scoops of ice cream with additional blackberry chips on top.
