With these delicious Crock Pot Korean Pork Street Tacos, you can taste the best of both Korean and Mexican cuisine. Tacos are delicious when they are filled with tender, flavorful pork and topped with fresh vegetables.
Ingredients: 2 lbs pork shoulder, thinly sliced. 1/2 cup soy sauce. 1/4 cup brown sugar. 3 cloves garlic, minced. 1 tablespoon ginger, grated. 1 tablespoon sesame oil. 1 tablespoon rice vinegar. 1 tablespoon Sriracha sauce. 1/2 cup chicken broth. Corn tortillas. Sliced green onions, for garnish. Sesame seeds, for garnish. Lime wedges, for serving.
Instructions: Mix soy sauce, brown sugar, ginger, lime juice, rice vinegar, Sriracha sauce, sesame oil, and chicken broth in a bowl using a whisk. Cut the pork shoulder into thin slices and put them in the crock pot. Make sure the pork is well covered by pouring the sauce mixture over it. For better flavor, cover and put in the fridge for at least an hour or overnight. On low heat, cook the pork that has been marinated in the crock pot for 6 to 8 hours, or until it is soft and can be shred with a fork. You can warm up corn tortillas in the microwave or a dry skillet until they are soft and warm. Put together the tacos by putting a lot of Korean pork on each tortilla.
